🥥 Millet Pasta with Coconut Curry Sauce (Fusion Style)

Ready to spice up pasta night? This recipe blends the comforting texture of millet pasta with the bold flavors of South Indian coconut curry. It’s rich, warming, and completely gluten-free—perfect for adventurous eaters!

📝 Ingredients:

  • 2 cups Sapore millet pasta

  • 1 tbsp coconut oil

  • 1 tsp mustard seeds

  • 1/2 onion, finely chopped

  • 5–6 curry leaves

  • 1 tsp ginger-garlic paste

  • 1/2 tsp turmeric powder

  • 1 tsp sambar powder or curry powder

  • 1 cup thick coconut milk

  • Salt to taste

  • Fresh coriander (for garnish)

  • Optional: Roasted peanuts or paneer cubes

👩‍🍳 Instructions:

  1. Boil millet pasta, drain, and set aside.

  2. Heat coconut oil in a pan. Add mustard seeds and let them splutter.

  3. Add curry leaves and chopped onions. Sauté till golden.

  4. Stir in ginger-garlic paste, turmeric, and curry powder. Cook for 1–2 minutes.

  5. Pour in coconut milk, mix, and simmer on low heat for 3–4 minutes.

  6. Add cooked pasta and gently toss to coat in the curry sauce.

  7. Garnish with coriander and serve hot.

🌟 Optional Add-ins:

Add roasted peanuts for crunch, or cubes of sautéed paneer for protein.
