📝 Ingredients:
2 cups cooked and cooled Sapore millet pasta
1/2 cup cherry tomatoes, halved
1/4 cup cucumber, diced
1/4 cup black olives, sliced
1/4 cup crumbled feta or paneer cubes
2 tbsp extra virgin olive oil
Juice of 1 lemon
1 tsp mixed Italian herbs
Salt and pepper to taste
Fresh mint or basil leaves (optional garnish)

Prepare the dressing: Mix olive oil, lemon juice, herbs, salt, and pepper in a bowl or jar.
In a large mixing bowl, combine the pasta, veggies, and cheese.
